Broiler Thighs in Berry Marinade with Roasted Vegetables

If summer berry picking has become tedious and the berries just won’t stop growing on the bushes, try using currants in a meat marinade. The berries add acidity and give the meat wonderful bluish-red hues. Colorful roasted vegetables make a great side dish for the meat

Preparation
Chop the chives, sage, and dill. Add the berries and mash everything into a smooth mixture using the bottom of a cup or a similar tool. Mix in the mayonnaise, crushed garlic, and balsamic vinegar. Season with salt and pepper. Place the chicken thighs into the marinade and let them sit for at least 2 hours. Grill or bake until cooked through.
For a delicious side, crispy roasted vegetables suit wonderfully with the meat. Choose your favorite vegetables (we recommend a combination of potatoes, carrots, and onions), wash them, and cut them into appropriate pieces. Toss the vegetables in a bowl with oil and season with garlic and your preferred herbs. Then, spread the vegetables on a baking sheet and roast in a preheated oven at 200 degrees Celsius for 30-40 minutes.
